As the sun sets on another glorious summer, there’s a bittersweet feeling in the air. The days grow shorter, and the slight cool air creeps into the evening breeze.
The beach has been a wonderful place to lose myself in the calming rhythm of the waves. I read a few books and together with the characters I embarked on a journey that led me through diverse landscapes, magical realms and heartfelt stories.
One of the most beautiful parts of the summer was discovering the hidden beauty of the sandbars. During low tide, with the sea on one side and the beach on the other, it felt like I was walking on the edge of the world.
And what’s summer without a cold treat? Summer and popsicles are like old friends. My homemade strawberry-carrot popsicles became a daily treat.
As the final days of summer draw near, I find myself etching memories of a fun summer that will forever remain imprinted in my heart. And I’ll eagerly await the excitement that next summer will bring.
Interested in making my homemade popsicles? Here’s my recipe.
Ingredients
- 20 frozen/fresh organic whole strawberries
- 5 pounds of organic carrots
- Popsicle molds or dixie cups
Recipe
- Chop the strawberries into small pieces
- Juice the carrots (I don’t peel the carrots, I just clean up the ends, if needed)
- Add a few cut up strawberries to each mold/cup
- Pour the carrot juice to each mold/cup until it is full
- Put in the freezer overnight
